I've heard of such a book as has all the times of all the freight trains going across the United States. Can you attest to this? And if so, where might I find such things? Or begin the search?

Freight trains rarely run on a schedule (if at all), so I doubt there's much truth to it. Passenger trains are designed to run on a schedule, but the chances of on-time-performance are usuaully stacked against them if any kind of traffic goes awry during the day (e.g. AmTrak's Southwest Chief is typically 2+ hours late).
So short answer: not likely.
