PRESENTING! *drum roll please* my interpretation of Underfell Alphys. Or as I and my friends have dubbed her "Fii".
Her design is heavily inspired by the many, many wonderful versions people have made of UF Alphys but also by Horrortale's Alphys. (I'm a sucker for stitched eye(s) on character designs)

Fii is a rather brutal looking creature and she does have the surliness and aggression to match it. Like most Underfell monsters she can be highly violent and ill-tempered. She's prone to irritation and bursts of explosive anger, during which she is known to bite and claw whoever she can get her claws on minus a select few. She does not use magic often, but when she does it manifests in two separate ways. The first being an acidic spit, which she can produce in amazing quantities in a short period of time when stressed/angry/fearful. The second is manifested in electricity that takes up the end of her tail, which she then uses like a sparking club.

Despite her hateful attitude towards others most of her 'evil' nature is a front. Beneath she is a very tired, very depressed monster. She carries horrible guilt from the incident with the amalgamates. To repent for what she views as one of her worst sins, and for keeping the amalgamates locked away, she spends hours in the true lab, battling her creations and letting them attack her. It is where most of her scars come from, minus those on her hands (those come from her work on Mettaton's body) and her missing eye (which was gouged by Asgore as punishment for her failure in the determination experiments).

She considers turning Mettaton into a robot built for the sole purpose of slaughter her second worst sin. Because of that she is constantly berating him and treating him horribly all because she wants him to hate her with all he has. Because if he hates her, then it makes things easier, easier to complete work, easier to order him around... easier to pretend she doesn't wish she could reverse what she'd done.

Ironically the creature she is most close too, is Azriel, the 'missing' prince of the Underground. He is the one who nicknamed her Fii. Their first meeting was through the multiple cameras she has around the underground. She found him interesting and they began to talk more and more.
