You scroll through until you find the rainbow gradient. You don't CHANGE the color.
If you want the normal one you change colors like you normally do.
The first blue then the other square pink :3

Magic wand tool a certain section.
Like let's say you draw a circle and make a new layer to color, you use the magic wand tool on the circle layer then CHANGE layers and color there.
OR color outside the lines, use the magic wand tool OUTSIDE THE CIRCLE and then erase all color outside the circle (on the other layer)
