at the beginning of the summer, i was ridiculously excited to bake a ton so i could have good vegan omnomnoms. i have baked crepes (FAIL), waffles (good!), chocolate chip cookies (eh), several batches of brownies (epic), berry muffins (i didn’t try them but people drunkenly told me they were good), cupcakes (same story), chocolate muffins (my best creation, no one tried them and the host of the potluck threw them away as soon as i left…. bitch), lemon cookies (delicious!), and today i tried scones. i have never made scones before. they are incredible. i shall now teach you how to make them.VEGAN SCONES.
ingredients:
* 2 cups of flour
* 1 cup of brown sugar
* tiny amounts of salt, baking soda, and baking powder
* 1/2 a cup of the milk of your choice (i recommend almond milk for a nuttier flavored scone)
* 6 tablespoons of earth balance (vegan butter. it’s delicious. buy it!)
* wee amounts of vanilla
* fruit & nut of choice. i went with diced walnuts and raisins
* maple syrup
directions:
* wisk the dry powdery ingredients
* melt butter and hand mix with fork
* add milk and vanilla and (gently, to avoid wheat glutanization) fold together with a fork
* pick up the sticky gooey mess of a dough and plop it onto a floured surface. knead in fruit or nut or whatever. knead some more, because it is the funnest thing EVER. really. it’s really fun.
* knead into a circle or two circles of about an inch thick. cut into as many triangles as you’d like and place triangles onto wax-papered cookie sheets.
* bake for 20 minutes at 400 degrees.
i wax-papered one and was out of paper so i reused some wax paper from the cookies i baked earlier this week. DO NOT DO THIS. while you’re at it, make sure you’re using oven-safe wax paper. actually, you should really just use parchment paper isntead. my reused-paper smoked up so much that smoke was coming out of the burners on top of the oven and i had to open the oven every few minutes to let smoke out. about 15 minutes into this i gave up and lowered the heat to 375. the scones turned out perfectly, but the ones on the old paper burnt a smidge on the bottom, whereas the ones on good paper are beautifully golden-brown.
