She doesn't understand his science at all. She, however, admires his dedication as much as he is fascinated by the way she perceives the world, he doesn't say of course. She has a very simple approach while his is much more complicated.
These 2 don't understand many things about the other, but that's what brings them together in the end.
She falls for him before he even realizes he's been traveling with a woman. (Srsly Ed....) He of course is completely oblivious to this and the fact he actually starts developing feelings for her too.

I felt like explaining this for no reason in particular.....

LOL well most seem to think Ed need a woman who is also an alchemist and compleeeetely understand what he does, this does happen in real life, but it's the other way around most of the time. She doesn't have to understand it, she knows it's important for him and she respects that even if she thinks it's boring.
LOL Any couple is better than that.
