This is the cake I made myself for my birthday. It's been ages since I've played with joconde. [If you don't know what a joconde imprime is, it's basically a very thin layer of sponge that encases a dessert]. This time I wanted to make it less of a uniform pattern and more of a canvas for something arty. I decided to go with something pretty but also animal themed, because of my obvious love of animals.Choosing what to put inside the cake is always the hardest. Often these cakes will be filled with mousse, but I figured I was probably the only one that would be happy to eat an entire cake made out of chocolate mousse. Instead I had to come up with other layers to pretend like it wasn't just an excuse to eat loads of mousse.
So. On the bottom there's a layer of chocolate genoise sponge, op top of that there's dark chocolate mousse, and another layer of sponge. To add a textural element I made a chocolate hazelnut crunch layer. It's basically a hazelnut ganache with pailleté feuilletine folded through -- think crunchy gourmet nutella. For the last layer I went with a fresh raspberry mousse to try to contrast all that rich sweetness. To decorate, I covered it with dark chocolate ganache. I piped on a bit of white chocolate, then adorned with fresh raspberries, lavender macarons and little chocolate blossoms shapes.
So basically it was one giant excuse to fill a cake with a bunch of my favourite things. And I loved every bite of it.

it looks amazing! not only birds on the side but also decoration on the top. even raspberry mousse is the same color as flowers on chocolate decorations! wow!

That was a total accident! Haha. When I bought the transfer sheet all I had decided on was 'birds'. I settled on the raspberry about 8 hours before I had to leave for dinner haha. It looks totally better though out than it was.

Great job! I absolutely adore your work, especially the topping is really creative, and of course the joconde. My birthday comes around this Monday, and even though I personally cannot eat cake, I might use it as an excuse to make a cake inspired by you on Sunday

Sadly not. My reasons for not eating cake are more eating disorder related than allergy related, which is sad but just how life is right now.
I think the process of actually making the cake is ten times as fun as eating it could ever be anyway

Pastry student here providing answer. Jaconde with designs on it can be created with a stencil. Put the stencil down on a silicone mat, and spread a thin layer of batter over it (in this case, it looks like the white batter was stenciled on first). Then, peel off the stencil - the batter is fairly stiff so it will stay in the stenciled shape. Stick it in the freezer until it's solid, then spread another layer of batter in a different color (chocolate here) over your design before baking. When the jaconde comes out of the oven the design will be baked in.
If you don't have a stencil, you can draw a design on with batter in a piping bag with a thin tip, but this one looks stenciled!

By the look and reading description. I see purple macarons, raspberry, and chocolate. I read chocolate, Nutella, Raspberry, Mousse, and Sponge. I wanna eat! I WANT CAKE! !
