Well, though no monsters were shown in the movie, appart from the corrupted Bahamut and a few shadow wraiths, I'm pretty sure there are still plenty of monsters in the world of FFVII. And since delivering usually involves traveling a lot, I'm guessing dear Chocobo-head has had to fight his share of creatures before getting to his destination. And since for some inexplicable reason monsters in all Final Fantasies carry Gil around...who knows? Maye he does get some pretty good tips on the way to work.

I really can't think of a better explanation for the new badass getup and motorcycle, though constructing that damn sword must had been frustrating as hell.
