I could have. But I felt having the originals worked well with Dipper and Mabel being around the same age.
Plus all the weirdness began with the first series so it felt appropriate.

Well, i think at one point these characters wouldn't have been related....Well, i think Gravity Falls was intentional while Ben 10 wasn't. But, that's just me.
I still ship those couples.
