Description A smooth and creamy white chocolate mousse with sharp crushed raspberry base topped off with more raspberries.

RECIPE
You will notice there is no egg whites in this recipe, unusual for a mousse but I do not like to eat or serve raw eggs to my children. There is a recipe linked in the photo below for my dark chocolate mousse if you are a purist and want mousse the proper way with raw eggs to make it a lot lighter and fluffier but for those who are not a fan this is a nice alternative.

Ingredients
White Chocolate (1/3 per serving glass)
Double/heavy cream (1/3 per serving glass)
Raspberries (1/3 per serving glass)

Method.
1. With an electric mixer whip up some cream into soft/medium peaks. Set aside.
2. Over a pan of hot water place a heat proof bowl and gently melt your chocolate, making sure the water does not touch your bowl, burning the chocolate. If however your chocolate does start to get a little grainy which is easily done with white chocolate add a couple drops of vegetable oil and mix, mix, mix, this will bring the chocolate back to a usable consistency. Leave to cool a little but not harden.
3. While waiting for your chocolate to cool wash and crush some raspberries and place them in the bottom of each glass. Clean off any mess up the inside of your serving glasses with some kitchen roll.
4. Now your chocolate has cooled, fold into the cream and layer on top your crushed raspberries.
5. Chill for 30 minutes or so, add some fresh raspberries on top and serve.

Store in an air tight container in the fridge for up to three days.
OPTIONAL
If you have more than ten minutes you can strain your raspberries to remove all the seeds and add some gelatin to it to create a nice clean line when adding the mousse on top.
You can add some vanilla pod to the mousse
If unlike me don't mind using raw egg add some whipped, stiff egg whites for a light and fluffy finish to the mousse.
If you don't like white chocolate, use milk or dark. Same goes for the raspberries you can use strawberries, nutella etc

This is actually more of a white chocolate whipped ganache. And eggs have been tested strenuously and found that the chickens are protected enough and the eggs pastuerized enough that they are something like 98% free of sallmonella while raw, if that's what you're worried about

I make chocolate pots as well, this is different as it is not heated cream with chocolate melted into it which is a lot heavier, the cream is whipped in this and tastes rather different.
I do not trust raw eggs at all, I will not chance my kids getting ill because of an ingredient that is not 100% essential.Β  I know a lot of people will say yes it is essential for mousse but I am not a puriest, I bake for my and my families needs so if I don't feel comfortable with an ingredient I will find my way around it, yes the fluffiness is compromised somewhat but my family enjoy it and for me that is the main thing.

You best get them to make the version with the eggs, I only make the egg less version as I hate using raw eggs but a house full of bakers would be much more confident using itΒ

Mmmmm that sounds good!
Taste wise not really, just makes it a little more light and fluffy but if you don't go mad mixing in the chocolate the cream holds up enough for me anyway.

I feel the same way too

Not because I'm afraid of raw eggs (although, I'm not supposed to do it while preggo) it's just that I hate recipes that only take whites or yolks because I throw away the rest. The waste annoys me.Β

I hate waste also, which is why half of the things I make is with leftovers.Β  I am scared of eggs also, my eldest has been ill a couple of times when she was younger because of eggs, don't want that to happen again.
