Probably because they've already had a lion based creature, the manticore from the season 1 premiere. Using that base again would be repetitive. Besides, in technicality a chimera is a mixture of anything really, especially creatures. So, tigers are pretty awesome, and a female lion wouldn't look as cool, so there's my theory
