No. The initial Grimm designs and concepts were neat and reasonably consistent, but like so many things about RWBY it started to drift away from that around the end of the second Volume or the third.

Well, new species of Grimm are discovered each day, and not all of them can follow a certain design scheme.

And with the Grimm design drifting away from this consisteny, well, I think this was mainly because
A: RoosterTeeth made them look like werewolves, bears and scorpions first because they wanted to establish Grimm as threat, and
B: The Grimm design was probably similar to the background character design: At first, they had to keep it simple, but eventually they got the skills or whatever to make more awesome ones.

1. Unless there's some reason for Grimm as a whole to change, they should remain consistent. If there are loads of weird Grimm with weird powers, we should have seen them from day 1.
A. ...I don't follow. Weird monsters can't be established as threats? And RT decided that a threatening design mattered more than what they effing did? (I never accepted the Grimm as a legitimate threat to the Kingdoms because they never actually did anything that affected them.)
B. I don't buy that. First off, there's not much time saved by making detailed models of vaguely wolf-like monsters instead of detailed models of things that are more obviously monstrous. Second, I don't consider the new designs to be more "awesome".

Yeah. I mean, we can both agree that the characters are awesome, right?

And who knows, maybe RoosterTeeth makes some Grimm that look more like the ones in Volume 1 and 2 in the future.

The characters are awesome. Shame that they got shoved out of the way for action and attempts at darkening the tone.

And for the record, the Grimm are far from my biggest complaint.

Ah, ok.

Anyway, do you also wonder what the other Beacon students do? I mean, I could totally see team CVFY help with keeping the city free from Grimm, and Coco could probably get team CRDL to help as well, simply by pointing out that Velvet has no problem fighting off the Grimm.
Maybe that´s what Yang´s going for (btw, the last episode I´ve seen so far is Two Steps Forward, Two Steps Back). Man, I´d love to see her kick Grimm butt in Vale, alongside all the other characters.

Interestingly enough, almost all of my RWBY fanfictions have the main character get to Vale and meet the students, who help the teachers fight off the Grimm. The one fanfiction that falls out of this mold only does so because it´s a crossover fanfiction where the main character, a RWBY OC of mine, ends up in another dimension.

If I still cared about RWBY, I probably would. The mounting inconsistencies and contradictions with the worldbuilding, the gibberish that passes for the villains' plans and motives, the tunnel-vision focus on "cool" action, the plot elements being thrown in and characters being thrown out at what seems like the writers' whim...I just don't care.
I still care about the RWBY and JNPR and Remnant and so on of the first Volume or two, but it feels like a different show. Like they decided to follow the lead of the trailers instead of the actual freaking show thus far. I don't care for that. I don't care about a girl in a red hood beating up a crowd of werewolf monsters, I don't care about a girl in a white dress fighting a giant suit of armor while singing about loneliness, I don't care about some blonde smashing  up a nightclub, I don't even care about a couple of people in black breaking into a train and fighting robots so they can blow it up before one turns her back on the organization. That's not why I liked RWBY. That's not why I cared.

So, you say that you saw the trailers, watched the show and now wonder why the show is like the trailers, right?

Because the way I understand it, the trailers are actually canon within the show.

No, I watched the show, watched the trailer, and then when later Volumes came out wondered why the show wasn't like the show. Then people on Reddit started saying "It's closer to what the trailers were like" and only then wondered why the show was trying to be more like the trailers.

Canon or non-canon doesn't matter. It's literally inconsequential.

Where is it inconsequential? Characters grow up, go through bigger problems than a school dance or dating, and tackle larger issues. Sometimes literally.
