This cleaver is designed to replace a chef's knife while maintaining the general blade profile of a cleaver.The blade is 10" of CPM 3V heat treated by Paul Bos to 60-61 HRc. CPM 3V is a tool steel with unparalleled toughness while still retaining good wear resistance. I ground this blade thin for effortless slicing. It takes a fine, hair-whittling, edge and keeps it, even if you're chopping though 2x4s.
The handle is Amboyna burl with mosaic pins.
