Don't get me wrong his texan accent made me feel confident in the eraly 2000's that we had the right guy for the President (still feel the same way about that former president today

The King of Dream Land vs. the Princess of the Night, eh? Wasn't going to do an analysis, but if you insist...
This one's harder to call than Bowser vs. Celestia. In terms of brute strength, Dedede can overpower Kirby with ease, and that hammer of his is actually technologically enhanced if Brawl taught me anything. Dedede also has an inhale like Kirby and can also do his float and even copy his High Jump ability. Also, like Bowser, Dedede has taken his fair share of beatings and has survived each and every single one of them. However, unlike Mario's arch nemesis, Dedede has a very limited repertoire outside of his minions. Seriously, this guy has Waddle Dees everywhere in his castle. And even though you've pointed out that Dedede has connections to summon a bunch of monsters, I'm assuming this is a strict one-on-one fight- neither combatant can bring outside help into the actual fight itself. Therefore, the Waddle Dee army and especially Night Mare Enterprises are taken away from Dedede.
Despite that, Dedede has proven to be a competent fighter, as emphasized by the fact that he was among the four heroes who saved the universe from almighty alien invasion, and has held his own against Kirby several times... only to ultimately fail. Though, Kirby and Dedede's feud has kind of gotten to the point where Dedede and Kirby no longer consider each other as enemies or even a threat to each other. In fact, Kirby and Dedede have teamed up constantly in the past, the most notable examples are Kirby 64, Canvas Curse, and Return to Dream Land. I know it doesn't help the issue, especially considering the fact that Mario and Bowser have teamed up a few times too, but they only willingly worked together due to common enemy or a common interest. Kirby and Dedede's willingness to cooperate for no explained reason in Return to Dream Land is rather shocking considering their history, it may as well have said "Kirby and Dedede's rivalry is now dead". On that note, let's go to Luna.
...Whose true extent of her arsenal hasn't been exactly revealed. Besides the magic of Nightmare Moon (assuming that Nightmare Moon is now an alternate form Luna can take), Luna can use her magic to affect the weather, bring inanimate objects to life, shape-shift, split herself into different ponies, teleport herself and her opponents, and control the night sky. Like her sister before her, Luna also has a lot of magic and can fly. And that's what canon and known (unless I missed something). I have no idea what else is up Luna's non-existent sleeves.
What is confirmed, though, is enough to give Dedede a run for his money. This is again including what isn't known. Luna is too much of a dark horse- literally- to even give this fight a proper overview. Whereas Bowser can overpower Celestia's magic, it's unknown if Dedede can do the same. If his brawn can prove to break through Luna's magic, he may fair better odds.

Another point you bring up. Whereas Luna would attempt to fight fair- in her present state of mind, at least- Dedede is known to be extremely underhanded in his fights against Kirby, especially in the anime.

King Dedede has been more a anti-hero ever since the first Kirby game since Nintendo and HAL likes to put nightmare fuelish villains as the main villains for every game. But they still have Dedede play a part in most of these since he's more of a rival to Kirby. Same thing goes with Meta Knight.
Luna easily has the upper hand against Dedede, but maybe things might go interesting if Dedede can go into "Masked Dedede" mode.

Well at least you did not say Princess Cadence vs Ganondorf. First Ganondorf is near human therefore hard to draw (and Ganondorf is cool then Ganon). Second it would be a jealousy princess or a party animal (that right I did not think he was evil) vs the ultimate evil. Third, I was thinking more of the lines of Discord vs Kirby with Kirby loving the Rain.
