Yeah, I see what you mean... Well, despite what most people belive, Ciel and Zero never really had a romantic relationship, it was more along the lines of a good friend/brother-sisterish relationship. There's been plenty of evidence of this, and I'm not interested in going through most of it so I'll go with this one summerizing reason: If Zero remembered X after his fight with Copy-X, then he'd remember Iris the moment he feels anything he had about Iris when he's with Ciel, and he'd shut his feelings off from her as he did with Layer. Simple as that.
