Here's some lore I wrote up for this a long LONG time ago.

The blazes are golem like creatures that were built to protect the ancient Nether fortresses. They were made of a fireproof metal similar to Netherite. The Blazes were designed after soldiers that protected these ancient castles. The Nether's corrosive atmosphere wore down the iron joints on the Blaze and sometimes they lost large amounts of their bodies leaving them as a head and their shield mechanisms. But rarely they have their full bodies complete with the blasters they have for arms. The Blaze is closely related to the iron golem who were built to protect the overworld villages. Blazes original design was very similar to the iron golem but the large clunky robotics were making it difficult to protect the fortresses. They were rebuilt to be more agile and lighter. This made them almost silent and almost undetectable. Blazes only survived because of the ancient mages magic. Hundreds of years later they still wander around the fortress ruins protecting them even though no one but the skeleton remains of the guardsmen live in the ruins.
