The Fates claim to know "everything"."Past, present, and future (indoor plumbing, it's gonna be BIG)!"
Yet are surprised by how they cannot cut Hercules's tread of life. This could mean that they cannot truly know everything, were selective of events they want to know, are simply forgetful, or it's possible to alter one's fate. I'm inclined to lean towards the latter.
