I read in a Discworld novel (''Guards! Guards!'' I think it was) that dragons weren't extinct or non-existent, but that they had gone somewhere they could really be dragons.
I think that this is a good theory.
Another theory that I like is that they are still here, but they are beings of magic that can't be seen by magic-less eyes, unless they escape their veil of secrecy by flying through a mirror just as a human looks at it(the dragon) through it(the mirror) (:which is the only way a non-magical being can see a dragon.)
I imagine the universe or world dragons have retired to is vast enough for them to fly without fearing knights in shining armour or setting a village on flames if they burped.
And I imagine the skies are deep and rich and eternal... and large enough for them to stretch their wings in without feeling cramped...

(no, I did not break it, that damage were already done and he'd given it to me for use in whatever painting I wanted, cause I firmly believe that even broken things are still beautiful and useful)
