Contrary to popular belief, dinosaurs didn't live in a world of tropical forests and savannahs. The planet was just as varied as it is today, with everything from scorching deserts to frozen tundras, all of which dinosaurs and their contemporaries inhabited. Good paleoart should reflect this; try to incorporate varied environments into your work. Not only does this provide variety, but it will also force you to think about what adaptations dinosaurs would need in the climates in question, making your depictions of them more unique.
