Personally, Estelle is considered Sebastian's girlfriend. ...officially. which is rare since he's more of a singular feline than the type to form a romantic relationship.

Yep. Sebastian's true love and he'll never let anyone or anything harm her, or by the gods he'll bring great wrath upon the sorry suckered he does so.

What if let's say...Super Rita had to ultimately kill Estelle for the greater good? Would he try to stop her?

Sebastian is the type of guy would protect his lover(s). Even if it means breaking his code of honor of never harming women, in this case Super Rita. That and this would coast him his friendship with Milo and his team.
He's the type of character who believes that women like Estelle can change...plush this I'd true love. What kind of boyfriend/future mate would he be if he stood by and let something awful happen to her.
Unless there's absolute logical reason for it.

Hmmm, okay. I can assume that even if Estelle died, he would somehow bring her back to life, thus guiding her to the path of righteousness.

He can bring her back if she died...but only as something else. Perhaps a demigod. Also, it's up to her, Sebastian would allow her to become one of the good guys or be herself. He'll allow it and will take responsibility for her actions.
That's how much he loves her. No lie, it's true love for Sebastian.
You know, you outa due tropes for your characters, describing their actions, their personality and their reactions towards others.
