That is where there's another technique. you can make the joints as some skeleton and have the detailed skin in some rubbery texture so it moves and poses seemlessly

Oh yeah, I have built a model with an armature in the tail and arms before, it had a soft rubber to those parts. Β This is it:

There are not a lot of models with that kind of material, but I know a few. Β Most of these don't get played with a lot and sit on a shelf anyway.

reminds me of a wish I had when I was younger. I wanted to make very realistic, posable dragon figures with that material.
Even some long finger joints in the wings.
