He doesn't find John exactly 'intresting', he finds him reliable and trusts him, that's a fact. What Sherlock does is he uses doc's medical skills and tells him what he thought of for one moment of investigation or another. Plus he uses John as a guinea pig (at least he did once, but they've only told us six stories for now). If Jim wasn't as he was, Sherlock might have found him 'intresting' in context you use above.
