Reverse falls originally is an AU where the pine twins switch places with Gideon. The twins are showbiz kids with dark undertones (how dark depends on the writer) and Gideon is the meek mystery lover. Oh and Bill is Spineless and is afraid of and a slave to the pine twins.
Over time people added in things like, Pacifica who loves 90’s fashions and is always bullied by Mabel and her little gang(Candy and Grenda).
Monster falls is where everyone is not human. Dipper is a deer centaur. Mabel is a mermaid. Wendy is a werewolf. Stan is a gargoyle. Gideon is a Vampire. etc
There are other reverse! and Monster! characters but they are different depending on who is writing/drawing.
I don't know much else but I hope that helps
