First off, lovely picture. Very nice blend of mice and bird.
Secondly, that is also my theory when it comes to Gryphons- only, I'd tend to stick to a bird of some sort and a feline. Like, oh say, a macaw and a lynx (random example).

True. I love how you used light, pastel colors to give it a sort of soft look. I feel like picking him up and petting his fluffy fur-feathers!
This makes me want to draw a griffon of two animals that are sort of opposites, like a lion-humming bird or a guinea pig-falcon.

I think that's true also. But different mixed breeds of bird and mamal would make differnt breeds of gryphon.
