I like how this is starting out, she's remembering the days she was fit, and now she wants to help Deku while getting in more shape than she was ever before.
Also it doesn't matter if its black and white or in colors, whatever style you pick is great. Though if it were me, I'd use color right when it reveals Inko's final stage of muscle or some big reveal while Deku is training, but hey its your choice buddy.

I think the Black & White looks fine. Honestly, a lot of times B&W looks cleaner / sharper than color. The important thing is how you feel. If you think it'll be more impactful or simply looks better than color then you should stick w/ B&W.

Depends. The trade-off from full color to black and white is typically that you can spend more time on line/character/environment quality, or you can produce similar quality work at a much faster clip. Since this one's the same usual drawing quality, the question becomes "Is this faster to produce?".
However, if you like black and white and want to make the comic in that style, then just go for it. Artistic vision first, public acceptance second.
