so a bit about this is that for me glitchtale needed more...well, glitch. it's called glitchtale after all so i'm taking some inspiration from earlier in glitchtale when frisk and chara would "glitch" during the fight with sans.
in my take, because of frisk resetting so much it caused the game to break a bit like any other game. this causes the mysterious door to waterfall to appear and thus frisk finds gaster. in my take, frisk is a bit of a game-breaker/hacker, explaining why during the fight with betty frisk was able to switch from being LV-3 to LV-19 - they hacked into a previous save-file. keep in mind that my take of glitchtale chara is still dead - up until frisk hacks and overrides themselves with the other save - bringing in a different chara whom was from a genocide run.
betty doesn't like how frisk is glitching out during their fight, being one of the only few who can actually see the game breaks and glitches/abnormalities (gaster being the other one who can see such a phenomenon). the pink creature with betty is her own soul ability and not some manifestation of hate. it can still devour souls but it can only take monster souls and the monsters have to be alive. in my take the creature can only make 'parodies' of the monsters it ate; meaning that the creatures that it uses to fight are mere empty shelled proxies in a way if that makes sense?
