How do you do collabs? I've heard and seen them, but I don't understand how they work.

depends on collab ^^
If collab use base, you just need to draw your OC/yourself (basically what collab wants, or what you want) on the spot of base you ask
If collab is more like one drawing, then it goes differently: one person does lineart, other colors it OR one person does one side and other person does second side. That all goes with how you arrange it ^^
