Even though you’re scheduled in at five in the morning, you should get here around four or four-thirty, the extra time will help; start with making a list of all the veggies you’ll need, crocking the proper amount of food is important; too much and you’ll waste supplies, too little will incur the wrath of the waitresses; carefully chop all the onions, tomatoes, green peppers, and broccoli, but not too carefully; you want to spend at most an hour and a half on veggies because you still need to make the noodles; no no no no no! What are you doing? I’m prepping the burner so I can get the water boiling; No! you forgot to put the coil on top of it; without that the pot will sit down in the flames and the bottom will burn; then the store could catch on fire! Oh….sorry; it’s alright, you’ve only done this once before; now don’t forget the water needs twenty minutes to boil rotini should be cooked for seven minutes and spaghetti for eight; after they’re cooked dump them into these buckets and scoop a lot of ice on top good, good, just like that; now fill them with cold water and add some vegetable oil and let them sit for two hours; have you made your labels for everything yet; What are you doing! It’s going on nine-thirty and you haven’t made the sauces or restocked the lettuce bucket or started rounds; seriously you’re running out of time, you need to be done by eleven; hurry, go check the sauces; we have three pan, two thin, a mayo, a sweet sauce, and half an alfredo so then I need one more pan and then, and two alfredo?; that sounds good just don’t do too much or too little, you’re going to have to guesstimate and use your own judgement also don’t forget the cheese sauce and remember it’s one ten ounce cup of water for every can of nacho cheese, one!; not ten ten ounce cups or you’ll end up having to make an abundance of nacho cheese like you did last time; that took us almost a week to use up; and don’t forget that lettuce bucket you need to drain out the water and fill it back up with fresh lettuce; once the lettuce is in put fresh water in too; oh my god it’s going on ten-thirty and I haven’t even started the rounds for lunch what do I do what do I do oh god I’m going to die the buffet starts at eleven and nothing is ready; stop panicking! Do not panic!; It’ll be ok, just breathe and don’t think about it, focus on getting them done and you’ll be fine you’re still learning how to do everything and it takes time to improve your speed at least the noodles taste great I’ll just drain them and put them in walk in; see everything is fine I’m done so I’ll help you out with rounds look at this we’re halfway done and it’s only ten-fifty we can do this!; see it wasn’t that bad, we finished just a little after eleven—hey wait were are you going did you finish your cleanups oh good you did those earlier ok then have a good day and see you again tomorrow morning;I wanted to laugh and cry at the same time; I may not be great at timing myself on tasks but at least I apparently make some damn good noodles.
