Here's Princess Zelda as she appears in her "princess dress" in the ending of The Legend of Zelda: A Link to the Past. She's in her full royal regalia here. We only see her like this for a brief moment during the ending of the game.

The reason why Zelda also has a "maiden dress" is because she's one of 7 special maidens who all get kidnapped by the bad guy. You, the player, assume the role of a boy named Link and go off on a quest to rescue all 7 of the maidens, of whom Princess Zelda is one. Naturally, Princess Zelda (who is the only maiden who gets a name) is the most important maiden and the girl you're supposed to save last (although it is possible to save her before saving some of the other girls).
