One thing I do very much appreciate about my mother is how willing she is to cook. It's nice to come home from work and have a meal she's prepared waiting for both Dad and myself. And her cooking is generally good, with any flaws often being either personal or things outside of her control.
I thought I'd draw Galileo comparing his sandwich to his mother's cooking. His enjoyment of PB&J sandwiches likely comes from his mother, who probably made them for him often when he was a small child. As such, eating them as a teenager reminds him of his childhood and his loving mother. Thorton has taken the opportunity to demean Galileo by making himself seem superior.
