Description Sorry for the lack of a more imaginative title this morning--just waking up. lol

Anyways...

Made this--this morning. (See above.)

What you'll need:

1 stoneware dish (a big one)
6-7 small to medium potatoes (quartered and diced). I think I might have used 8. Not sure.
1 large onion
4 slices of cheese

Seasoning:

Garlic Powder
Oregano (you don't need to go crazy on this.)

Prep:

Quarter and slice the potatoes into a large bowl and then fill it with cold water a couple of times--drain--then refill and let sit on the counter--until you're ready to use them.

Do the same with the large onion. (No water in this bowl! lol) Add some canola oil to it in another smaller stoneware dish; then add a little tiny bit of maple syrup or molasses to the mix. Throw in some garlic powder and oregano and mix...WELL.

In a small stir-fry pan or regular pan (if you have one), throw in the onion mix and place on a low temperature setting.

Cook and stir frequently for about...6-10 minutes until it looks like it's starting to brown a little.

Cover during this time.

Then take the pan and dump the onions into the bottom of the stoneware dish and spread out evenly with a wooden spoon. Don't panic if it doesn't cover it enough. That's not the point. lol


With the potatoes...? Drain the bowl and then scoop out some of the potatoes into that small stoneware dish you just used for the onions (don't worry, it won't cause the universe to implode for some of you worried about your breakfast tasting a bit too onion-y. lol)

Throw in some garlic powder and oregano like you did with the onions and dump on top of the glazed cooked onions and repeat with the remaining diced potatoes.

Then take 4 slices of cheese (you can mix and match on this one--if you want to experiment!) and cover the potatoes. Take a 5th slice, fold it in half and cover the gap in the middle of the stoneware dish on top.

YOU'RE DONE!

Cook time:

Take a cookie sheet and place it in the oven after it pre-heats to 400 degrees and place the uncovered stoneware dish in the center and bake for 45 minutes. Maybe an hour--if things don't appear kosher.

But it should be enough time for the dish to bake.

Serves 2-3 people. Maybe 4.
