I don't get why you can't shake there hand say sorry then leave why do you have to hug them blush then leave while still blushing. can you elaborate for that choice?

On the blushing,I would say it is because Gilda is embarrassed with having to apologize. For admitting your wrong is very embarressing, especially when you don't want to be seen as week.
On the hug... well why not? Do you honestly think a mere handshake would have been enough? Gilda made Fluttershy run away crying, she probably though a simply handshake wouldn't have been enough.
