Katara: Buying off Appa from the merchants in Ba Sing Se: 20 frickin gold pieces! (a total outrage!) Facing Zuko and having your robes burnt and ripped to charred shreds (and you know that the little pervert did it on purpose!): 3 silver coins and black eye for the perv (and maybe just a peck on the cheek for effort). Watching your brother yell at you for kissing the little perv and then curl up to sleep off a cactus juice hangover:...priceless ^^

That doesn't make him a coward - as I recall, he fights to protect those he cares about, even when he's pretty sure he'll get his butt kicked. I believe that's called courage.
