It's not deans symbol. By the look of it the artist randomly picked symbols for each character. The one here for dean is a Celtic knot of trinity.

I just happened to be prowling the religion section at the library not too long after I discovered the show, found a book on angels, and there he was. I couldn't tell you the name of the book, but if you look under angels in the card catalog, something should come up.
