It IS common sense. Besides, using a lance and shield limits any mobility required for true flight. From the massive weight gain, Sirfetch’d is also likely to be slower than Farfetch’d. Other Pokémon also integrate this aspect into their gameplay— Silvally is statistically identical to Type: Null except for speed because of the latter’s inhibitor helmet, and Mega Sableye is slower because of its enlarged gem.

Of course it does. Farfetch’d becoming a Fighting Type as Sirfetch’d is integrated into the gameplay as well as design. While it may still learn Flying moves, they’re no longer useful for it (no more STAB), which fits with how having 225-lb weapons in both wings hinders any capability of flight.
Also, the fact that Fighting Type has an advantage over Normal makes additional sense of the change. Trained martial artists have better combat skills than an average person. And specialized training comes at the expense of certain skills, also explaining Sirfetch’d’s loss of Flying Type.

I have justified it thoroughly several times already. KNIGHTS. DON’T. FLY. Even for a bird-based one it’s not going to fly very well with a lance and shield in both wings.
Besides, this isn’t the first time a Pokémon has had a drastic change in Type upon evolution. Alolan Marowak completely discarded the Ground Type for Fire/Ghost, and before Gen 6 Azurill changed from pure-Normal to pure-Water.
Sirfetch’d being a Fighting Type is another aspect of the element that emphasizes chivalry and justice. This has been seen before with Gallade and the Swords of Justice. Fighting Types don’t just use brute strength; they’re trained and disciplined to use their combat skills in self-defense, which is why they’re strong on underhanded Dark Types (Dark is evil in Japanese). Likewise, Fighting Types’ straightforward combat style is poorly effective on opponents with superior mobility (Flying) and supernatural powers (Psychic and Fairy).

The fact that flightless Pokémon like Doduo are Flying is an artifact of early Gens birds be Flying Type. Since then, there are other birds that aren’t even Flying Type at all, like Blaziken and Empoleon. Sirfetch’d cannot be Flying Type because its wings are full and thus can no longer be used effectively for air locomotion. It’s not hard to visualize the difficulty to do so with 225 lbs in both hands.

That’s exactly the point of early installment weirdness on Flying Type’s assignment on certain species. Emolga is an example of later Generations spreading out the distribution for diversity; the same thing happened with Dragon. It used to be exclusive to the Dratini family, but now there are bats, dinosaurs, slugs, birds, and trees being classified as Dragons.
