I honestly think that the result would be the other way around. Asuka could easily mop the floor with Shinji. While Shinji may have a higher sync ratio, in terms of skill, Asuka is the best. She did take down 9 Eva's in under five minutes in EoE.

I rememebr they had a sort of lance once (not Longinus) a combat one. An actual katana would have been cool, but it would diverged too much from the essence of the show, combat Knives that slice everything like butter. I like also how Unit-01's right hand has Unit-02's eyebals on its fingers. That is a nice and funny detail there.
