Description How I would design these three characters.

Link was always depicted as a young man who is a commoner that is thrust into a quest in order to conquer a power greater than he could ever achieve himself. Many times Link is thrown into his adventure during childhood or adolescence, but I personally would prefer a take of him and Zelda as young adults. I don't particularly like the use of chain-mail and hard leather in many modern representations, because it makes him look more like a soldier, which he isn't. I prefer link to have a very simple look (I even removed the gloves), I think it makes him more personable. Also I gave him a slight hunch (he didn't take etiquette classes as a child you know).

Many images that I have seen online of Princess Zelda depict her with a sword or in an aggressive pose. Yes it's nice to see female characters that aren't passive, but I think Princess Zelda shouldn't be one of them. This is because firstly she is a Princess and secondly she is the representative of Wisdom. Her role serves not only as a guide for the hero, but also provides an ultimate goal for Link to achieve (Wisdom has no direct ability to contend against Power, only Courage can wield the strength that Wisdom creates). Thus I personally would make Zelda very passive for the majority of the narrative.

As for Ganondorf, I wouldn't change much, except for maybe make him look more like a king than a magician.
