Some people wanted more blanket monster Sans so why not. Never had much of a childhood before, so why not have one now? So much screaming in this house.I wonder if this counts as handplates related, hmmm.

Actually, this makes perfect sense psychologically. People who are traumatized when they are kids have something called arrested development, where parts of their emotional development never progress past the age they were traumatized at. People with arrested development can still find some childish activities enjoyable and under certain stressful situations can act like the age they were traumatized at. So yes, Sans would definitely have arrested development and would still probably enjoy being the blanket monster and tickling Papyrus even as an adult because of it.
