He didn't die of any reason though. How would he know when he would die? He didn't get in any fights or get sick, and I'm pretty sure you can't die of lacking hop unless you commit suicide.

In the game, HOPE is the equivalent to Health Points. If their HOPE is too low, the monster has the risk of "falling down", or going comatose. Soon afterwards, they die. Sans has always had low HP. He's tired of trying. That's why he apparently only has 1 HP and probably why he sleeps so much (sleeping raises you HP over the max).
In Zarla's AU, Sans eventually dies from his lack of HOPE. He falls down, and then he turns to dust, hence this AU being called the Dust-jar AU.
