And I'd say about a week to learn the interface of Blender, and another week to be able to make a few models. Two weeks or so to learn how to layer textures (which is VERY useful; a big step in achieving realism), and learning about rendering/lighting maybe a few days. The other stuff-- special FX, material and composite nodes, animation, UV-mapping and stuff-- you won't need them to create most scenes, but those I'd say a month or so.
Quick summary: a month for models, a month for putting together full-scale scenes. So two months for something decent, although I'd actually suggest you put stuff up on deviantart as you go so you have the motivation for learning Blender. Tis a really cool program.
Btw, I highly suggest these tutorials: Blender Modeling Tutorials . Specifically the winter scene one. Teaches the basic interface; also the same tutorial I used when I started.
