Sure. (this is not anything "cannon" as this is just what I had in mind when making the character, and if by some chance I use the character in a story or something this may change, though this is what he is in my mind right now.)
Basically, he tries to get people to sacrifice the souls of others in exchange for something they desire but cannot get themselves. They preform a ritual in which they subject the victim to an excruciating processes of torture in order to extract their souls for his consumption. This means that often his associates are more dangerous then him. Though most of those who meet him find themselves suffering in one way or another, as their actions do taint their own souls as well. It should also be mentioned that a heavily tainted soul is of no interest to this demon. Though he can palate a slightly impure soul he will not consume an entirely blackened one. This means that his associates cannot sacrifice their own souls unless they offer it up front.
The unnamed demon himself has the heart of a trickster and the mind of a business man. He will accept nearly any offer that is given to him, but if he believes he is being ripped off (to much work for not enough souls) he will often play a cruel prank on his associate by twisting their words in such a way that they receive an undesired end. Such as if he is asked to raise the dead for a soul or souls that he believes is/are not of equal value to the life he is being asked to resurrect, he will bring the person back, but strip them of their empathy and make them cruel and cunning so that they can betray the person who asked for their life to be given back. He will often never let his associate know if he thinks the deal is fair or not so it is common for associates to over pay for his services. he does this for that exact reason. Those who either pay fairly or over pay will be given exactly as they desire in hopes that they will ask for more favors in the future.Β
However, one should not attempt to incur the wrath of this demon as he is known to lash out in rage at those he finds particularly annoying. He may endure some abuse if he believes you are resourceful enough to be worth the headache, though one should not test his patients. He is able to generate any amount of dark arms from the shadow beneath his feet to either butcher people with their razor sharp claws or strangle them to death. If he thinks you are especially insufferable he will curse your remaining life so that you are made to suffer for his amusement for the rest of your days. It should also be mentioned that he will not allow you to commit suicide if you are so unlucky to be cursed my him. Your guns will lock up, your noose will rip, and your poisons will go missing.Β
He seeks power through these souls. Why he wants this power is known only by him and him alone.
It is also worth noting that none have seen beneath his hood or behind his mask. Some believe that the key to vanquishing him lies beneath his shroud. Others think that he wears them so that his associates will not die of fright upon seeing him, but still know to fear him. Yet others think he wears them only to trick others into thinking that he has a weakness to hide when he has none, as another cruel joke. All that is known is that he's certainly not going to tell us.

Well you've given me a dope backstory.
My original question was pretty vague so I'm going to clarify it.
What's he like? Not what he does for the hell out of it. How does he interact with everyone around him based only on his personality?

Alright.
He will often look down on others and mock them for their mistakes and short comings. He sees himself as being superior to others though he doesn't necessarily hate them. He enjoys tormenting others as a sadistic trickster and loves playing mind games with them in order to make them doubt themselves as much as possible.
He is clever and cunning and has not once been fooled by another to this day.Β
He is generally happy and carefree and doesn't let anything get to him. He is not capable of love or compassion and he is completely sadistic towards others. He does not know fear or sorrow as he doesn't really take anything or anyone seriously enough. This is why he has so little respect for others. Living grave lives with hatred and malice rather that indulging in pleasures is the greatest act of stupidity to him and he will not hesitate to let others know just how stupid he thinks they are for taking anything seriously.
He is a trickster who loves to torment and abuse others and will do whatever he likes and will not act to please others unless he has something to gain.
If you spoke to him he would likely spend most of the conversation trying to make fun of you for all of your logical fallacies and he will make light of or even trample on everything you hold sacred.Β
It is this carelessness however, that may be his greatest weakness (that we know of). He will often times miss out on opportunities or make a mistake of some kind because he never thinks to hard on something that doesn't interest him. Though he rarely looses much his impulsive and carefree nature will often cause him to make mistakes here or there.
Edit: He also tends to speak rather calmly and civilly towards others, though often in a patronizing way.
