To Deadenddoll (cheers!):
I use only two applications:ultrafractal and apophysis at present..they are the best IMHO, unfortunately ultrafractal is not so simple so I'd start with apophysis ([link] ), which is free.
Hints: I usually start with a grey palette of colors, changing parameters, morphing them, zooming until an interesting shape is found. At this point I try to apply colours, using the default palettes or building some new ones...the two most useful parameters for gradients are rotation and frequency.
After some time spent you can soon guess which is the best palette for a shape, and the best frequency (how narrow).
Also, very important are brightness and gamma value, which allow to control contrast and ditribute the color in a way that the image is not "burnt" (clipping of the palette).
There are no many secrets IMHO, only experience (lots of days spent) and taste.
Apophysis allows experiences users also to start with an idea of a shape (for example...a fractal apple. rose, etc) and develop it, editing the simgle IFS transformations, but this requires a little math studies.
For beginners it's enough to choose something to start with, mutate it, browse, zoom and select the colours...lots of fun.

I forgot to say that if you're lucky enough to have a mac, buy ArtMatic pro and you'll get fractals and other images at lightning speed, without spending too much time to learn how it works.
