The scenario that would play out would be a cross between "Space Seed" and "Charlie X" with subplots of Steven trying to cope with the fact that he was gone for two centures his friends (possibly excluding the gems) are dead, with culture shock moments of steven trying to understand the quirks of 23rd century technology (which has strangely regressed back to bulky computers with tiny screens, buttons instead of touchscreens and floppy disks)

Yeah, that might be hard to explain. Though I can’t see Steven being like either Kahn or Charlie X, he’d probably just settle for trying to make the ship look nice and maybe trying to get along with the crew. (If homeworld and the federation are at peace during that time, I bet he might like to know that. I would guess that Kirk and Spock could tell him that. Imagine him talking with Spock as well? And who knows? They even could travel back in time and bring him back where he needs to be.)

though if the federation and homeworld had any diplomatic relations. Starfleet and the federation may be forced to hide him and his identity, as this is a timeline where it's not yet revealed that Rose was pink so they still think steven is rose

the ones in beach city that were lost to time. Fry Bits being one example.

Not listed on the replicator and Beach citywalk fries along with the rest of Beach city got destroyed in WW3/Gem War 2 (the place is now a resort city in the 23rd century with almost none of the old buildings intact except for the water tower, lighthouse and Steven's house).
Just imagine Steven returning to beach city and only being able to recognize it from the few surviving landmarks from his time. His house being fortunately intact thanks to the Crytal gems continuing to maintain it.
