Description If you guys have not heard of this website, I would seriously encourage you to check it out! Delicious gluten-free food that tastes great (I love gluten & these recipes are still tasty). They are really healthy as well for the health-conscious out there that love their sweets (they use much less butter & sugar than traditional cookies):

I changed the original recipe just a bit, but still tastes great:

1) Oven to bake at 350F
2) mix these ingredients together:

2.5 cups blanched almond flour
1/4 cup carob powder
1/2 teaspoon sea salt
1/2 teaspoon baking soda

3) melt your choice of fat & mix in your sweetener:

1/3 cup vegan shortening/butter
1/4 cup honey/agave (don't use sugar because you'll want the moisture)

4) Now mix all ingredients together until the dough starts to stick together. (don't need to worry about how much to mix because there's no gluten to make the cookies tough). The dough will look a little darker in color. If you can pick up a ball & it stays, you are good.

5) At this time...taste it. See if you think it's sweet enough to your liking (I tend to like my desserts on the less sweet side). If not, add more sweetener to taste.

6) Now add the chocolate chips:

1 cup chocolate chips (or as many as you cram in with the dough still holding together!)

7) Roll a ball of dough in your hand & flatten it into the baking sheet. Don't worry, the dough is going to be a bit loose, but it will stay together once you bake it. The other nice thing is that the cookies won't expand very much so squeeze them in the sheet! Should make about 24 cookies give or take.

8) Bake them for 7-10 minutes (start smelling chocolate? I would take them out)
9) Let them cool then devour! (^~ ^ )

These are on the chewy side although I think if you cook it more, it would get crunchier!
