Yes it would make sense for Merlin to be lust, both her assets and lust for knowledge fit it well but I guess gluttony also fits since she always wants more and more knowledge. Gowther lusts for a heart, I guess this can't be called gluttony since he just wants a heart and not more and more hearts. I think this is why?

For me Gowther's attitude looks more related to envy more than longing for having "feelings". There is still this thing about him being a former Commandment and Merlin's skill to toy easily with them and being immune to their curses, so probably it is more related to his past self as "demon" rather than his current form as puppet, and probably, lasting experiment of Merlin. I'm waiting to see if that is correct because so far Gowther is not living for his appointed Sin (barring whatever he done to Guila in the past lol). Can't wait to see more about Merlin because she looks like she holds the most important mysteries of the whole story behind the Sin and Melioda's past. I'm so hype now
