They are not lesbians. They are gems, and thus have no gender. It's just easier to have them appear as females, to better allow Steven to assocate with them as his mother figure is gone, and they are filling that void.

No not really. In real life, rubies are basically red sapphires, so that is maybe why the Crewniverse chose them. Besides it would make more sense if Ruby and Sapphire fused to make a Gem called Emerald, not Garnet. Thats just me though.
