I don't think you are to change something.
Unless you decide to switch the card in his hat for something VooDoo-ish.
It's just that Gambit (when not in his X-men outfit) IS the idea of a Louisiana clichee, and since it's the best known character of the clichee, is the one who pops up.
In your case, not only the style of clothing, but generally the hair and some facial features just bring him to mind. And... There's not much you can do about it - it's about the feel of the character's presence. It's the "standards".
I'm certain that in a story, he'd have a different personality and, since he already has different skills and a different setting, that would tint the character in a more unique way.
Other than that - it's a great character. I like his style.
