This is a photograph of two paintings I did recently with the same watercolor tubes/painting set on two different papers, just a couple of weeks apart. I was really surprised with such a tremendous difference.
The painting on top was done on a cheap paper without proper sizing for watercolors (300 gsm) on a wet day. The colors are very faded.
The painting at the bottom was done with the same watercolors on a Hahnemühle matt paper (200 gsm) at home. The colors are much brighter and crisp and it was easier to keep a variety of values (particularly to reach darker values) and a variety of edges, all the way from soft to hard.
I was really stunned with the results. Both paintings were done with the same cheap watercolors. I started painting watercolors at least 3 years ago and I always get this chalky look when using less water, which I thought was due to using cheap paint, not from the paper!!! After all the paper plays a major part in it! And it turns out the thickness of the paper is also not the most important thing, its sizing-coating is much more important.
Wow, my mind was blown away!
