Firstly I'd love to thank Eggman249 on Garry's Mod for making this awesome downloadable prop character which can be downloaded here: [link]
I noticed there weren't any good screenshots or clear references of the Servant Grunt's entire body so I decided to make one

The Brute and the Grunt are called Gatherers. This guys is very much called a Grunt. That is his name in the concept artwork and that is his name in the Amnesia game files.
