I personally use 'Multiply' blending mode to add colours, then adjust it afterwards with adjustment layers and additional other layers as I see fit.
Previously I have also used 'overlay' as the primary colour layer, and some artists use 'color' instead.

Okay I just have to say this is an epic remake! And another thing, do you get rid of the drawing layer or do you paint over it completely? Because my brain doesn't like to do that so much, so it only lets me go over it until I have the form down and then it deletes or hides the drawing lsyer.

Sometimes I completely get rid of the sketch layer at one point, once I've got most of the shapes roughly down. Other times I keep it if it's not immediately noticeable anymore.
Or I partially remove it in certain locations, which I did for this piece, using a layer mask. Like some of the lines in the areas I wasn't going to detail and thus not brush over a lot like the wing tips, hair or hooves.
