Ever wonder how an ONYX, SNORLAX, or BOUFFALANT can actually hide in tall grass?... that's either some seriously tall grass... or pokemons' got mad hiding skills...I just feel that random battles are a bit silly, cause lets be honest, you would TOTALLY see it from a mile away

Nope! I'm talking pure lore.
*ahem* In the traditional RPG "random battle", a party is forced to fight with whatever got their attention. Normally, this can be seen as "the party sees an enemy/a group of enemies". If the creatures are of neutral nature, they become aggressive when confronted. If they're hostile in nature, the party is defending rather than attacking.
When a party is given the chance to strike first, it generally means they saw the enemy before the enemy saw them. When a party is surprised, it means just the opposite; the enemy saw the party before the party saw the enemy. Alternately, these two events could simply be a case of the respective party not paying attention to their surroundings, rather than being completely unaware anything was there.
TL;DR version: Enemies are always there. Random battles are just a way to show them being there without the game programmers actually showing them being there. This includes massive enemies that couldn't possibly hide behind/in something.
